Pros

The General Manager is given a good amount of freedom to manage as he/she sees fit, however, for many aspects of the restaurant your hands are tied.

Cons

It is impossible to achieve the numbers that corporate requires of you. Labor is the most difficult to comply with, and many managers solve this by spending their vacation time to reduce payroll. It is also common to play "payroll tricks" like showing your assistant manager as taking a sick day so that days pay is not charged to labor. Similar tricks are done with food cost, inventory and the repair budget.
